The global challenges in climate, energy, economics and geostrategy underscore the urgency for digitalizing the agri-food industry, including the dairy sector. This digital transformation should extend beyond industrial processes to cover the entire value chain, from dairy farming through processing and distribution, to the end consumer, engaging health authorities as key players. Embracing digitalization means integrating process analytical technologies (PAT) with sensors for real-time data on critical variables during production, moving beyond traditional control measures like proximate analysis, temperature, pressure, mass, volume, flow rate, viscosity, or conductivity, which fall short. The shift towards next-generation sensors capable of inline monitoring of functional, quality, authenticity, and safety parameters from raw materials to final products marks a pivotal move towards more sophisticated control and insights across the dairy production chain. This discussion also touches on the evolving role of fluorescence spectroscopy in dairy sector. Intrinsic fluorescence technology, expected to complement and even rival the importance of other spectroscopic techniques for quality and process optimization, holds the promise of enhancing compound functionality measurement, authentication, and rapid fraud detection. This technological evolution is poised to significantly advance dairy production in efficiency, quality, safety, authenticity and sustainability, representing a significant leap forward in addressing the sector’s challenges.
