This is the story of some like-minded people with a passion for food and an interest in its variety and origins who started out together to create “Das Provisorium,” a unique coworking space for sustainable food and drinks in Zurich. From its humble start in 2016, it has by now become the leading incubator, catalyst, and enabler for many things related to sustainable food in Zurich. An exploration of the economic and social history of Zurich and its connection to sustainable food is followed by an extensive interview with one of the founders of “Das Provisorium” looking into its story from the beginning. It concludes with some additional thoughts about the project and food production in the city as well as a short placement of the project regarding the Three-Pillar Model and UN SDGs.
