Propolis and geopropolis are bee products derived from honeybees and stingless bees activity, respectively. Both propolis types (propolis in general) are gaining more and more attention due to their alleged biological properties. Because composition and activity are interconnected, several works have addressed propolis chemical variability, but comparatively much less is known about their volatile chemical profile. The volatile fraction of propolis can be impacted in a variety of ways, from the available plants or other types of materials used by the various bee species and the type of bees, honeybees or stingless bees, to their ultimate isolation and analysis. This work reviews the existing literature on the volatile constituents of propolis and geopropolis, their origin, bee-producing species, plant sources, their isolation as well as chemical and sensory analysis, covering propolis and geopropolis volatile samples from 35 countries.
