Nutri-cereals, often known as millet, are small grains used for food, feed, and fodder. Millets are a major food source in arid and semi-arid parts of the world. Millets are the precursors of nourishment essential for human wellness. In addition to a variety of vital nutritional components such as vitamins, minerals, and micronutrients, millet grains also include a significant quantity of anti-nutritional components. It is imperative to eliminate anti-nutritional components from the specific variety of millet before consuming it, as failure to do so poses significant health risks. Since ancient times, millet grains have been processed at the home level using a variety of methods to prepare them for human use. Soaking, heating, roasting, fermenting, cooking etc. are some of these processes. The goal of the intervention was to stop the millet population decline, which was mostly caused by difficulties preparing the grain as a direct food source. In order to minimize the annoyances and to create, improve, and standardize millet product technologies, efforts were made to diversify the millet product through processing technologies.
