We believe that wine is special, and one of the things that makes it special is that it is essentially a natural product. We argue that this naturalness is important for wine and that any attempt to make wine less natural by allowing winemakers greater freedom to make more additions could severely damage the image of wine and its continued specialness. With the increasing development of China’s economy and the upgrading of consumers’ consumption, Chinese wine is developing towards a more authentic and honest direction, expressing the finest of the vineyard terroir, and the wine is more natural and sustainable. In this chapter, we introduce the diversity of terroirs in Chinese wine regions and the Chinese philosophy in wine, while also focusing on the acceptance of natural wines by Chinese consumers and the current status of natural wine production in China.
