The growing global population has intensified the challenge of ensuring access to nutritious food, making the Sustainable Development Goal of Zero Hunger increasingly elusive. In San Gil, Santander, Colombia, this issue is exacerbated by land grabbing and soil overexploitation, which has affected 62% of the region’s soils, limiting spaces for sustainable vegetable production. Although the area offers favorable climatic conditions for cultivating curly lettuce, steep slopes, limited space, and food deterioration during transport hinder local food security. This study proposes using vertical hydroponic systems to produce curly lettuce in small spaces of just 1m2. Designed for families of four, these systems enable fresh, high-quality production, outperforming market standards. The descriptive and experimental research included system design, material cost analysis, and evaluation of curly lettuce yield. Results showed a monthly production of 139 lettuces per 1m2, generating revenues of 132 USD and a net profit of 102 USD. This method proves economical, practical, and sustainable, offering a reliable source of nutritious food and improving food security in San Gil. Vertical hydroponics can address spatial and environmental constraints, ensuring healthier diets and promoting sustainable agricultural practices in the region.
