Satiety Status and Health Benefiting Features of Rye-Based Products

Diet is most important factors which affects in the risk for developing non-communicable diseases and premature death. Cereal foods are rich in dietary fiber and important source of energy. Whole grain flakes contain a lot of fiber that’s why consumption of high amount of whole grain reduces the risk of development of many chronic diseases like cardiovascular disease, type 2 diabetes, and few types of cancers. Of the cereals, rye contain large amount of dietary fiber with wide selection of bioactive compounds. Many different studies introduce that rye-based foods have potential health benefits and physiological effects. When compared to wheat bread under isocaloric settings and standard amounts of accessible carbohydrates, rye meal has a demonstrated beneficial effect on insulin metabolism that may help to avoid diabetes. According to recent research, changes in blood glucose flow may contribute to these consequences. In addition, Satiety comes from both the cognitive and physiological response to foods experience during a meal time. Different studies have introduced the beneficial effects of rye-based foods on satiety, there is a logical reason for the positive effects on weight management that have lately been proven. Rye cereal has been found to increase satiety, decrease hunger and lower the desire to eat. After consumption of rye products, including whole-grain porridges and breads, satiety ratings improved and hunger decreased. Recent findings show that eating rye has positive impacts on blood lipids and inflammation. Making rye-based dishes appetizing and generally accepted by customers is a difficulty. The creation of novel and delicious rye products as well as focused marketing campaigns are essential to raising rye food awareness and consumption. Therefore, the purpose of this chapter is to provide some illustrative effective information about rye-based products on satiety and health benefits. In addition, this chapter also provides information about variety bioactive compounds that may have separate or combined positive health effects and new trends and technologies which makes rye products more available to the people.
