According to archeologists and paleontologists, the vine, from which the wine comes, has a prehistory of several million years. Scientific proof of the age of the vine is fossilized vine plants that are 60 million years old [1]. Even before the ice age, it thrived in the polar zone, mainly in the region we know today as Iceland, in Northern Europe and also in northwestern Asia. The glaciers had a significant effect in limiting its spread and in some way imposed the geographical isolation of many varieties, some of which evolved into different species. In time, several populations of wild vines moved to warmer zones, mainly to the wider area of the southern Caucasus. In this region, between the Black Sea, the Caspian Sea and Mesopotamia, the species Vitis vinifera was born. Different varieties of this species are still cultivated today.
