In retail environments, where there is much potential for microbial deterioration, many beers are supplied post-production as kegs connected to draft delivery systems. As a result, when beer draft lines are severely polluted, restaurants and bars may have to pay a large amount of money and lose time cleaning. Although spoilage monitoring in the retail beer business is sometimes disregarded, if invading bacteria significantly alter a beer’s flavour profile, this might pose one of the biggest dangers to the beverage’s profitability. The most prevalent bacterial cause of beer spoiling in the world is Lactobacillus brevis. It becomes apparent that there are contaminants throughout any aspect of the brewing process, from storage to filtering to primary and secondary fermentation to packing. Nonetheless, the ability of L. brevis strains to deteriorate varies and they may grow in a wide variety of beers. Weak wort filtering performance is linked to many bacterial groupings. The formation of biofilm on the kernel surface layers during malting that contained extracellular polymeric substances was a significant component in wort separation. The study focuses on yeast-induced biofilm development, biofilm-forming microorganisms in breweries, and potential biofilm prevention in brewing operations.
