This book chapter discusses the many characterization techniques, their applications, and their drawbacks for determining the physicochemical properties of food in various industries. To anticipate food quality, fundamental traits like stability, encapsulation, optical inspection, microscopic observation, etc., are also clearly discussed. For instance, the stability of micro- and nanostructures is essential to maintaining food quality. Functional vitamins, anti-inflammatory agents, probiotics, carotenoids, preservatives, omega fatty acids, proteins, peptides, lipids, and carbohydrates are advantageous to it. Visual observation techniques provide precise measurements and interpretations of food product quality and upkeep. The characteristics of numerous materials, including food products, are explained through microscopy studies. Along with applications and restrictions in the food industry, the book chapter also covers the fundamentals and instrumentation of many techniques, including thermogravimetric analysis, differential scanning calorimetry, gas-liquid chromatography, atomic force microscopy, scanning probe microscopy, optical microscopy, X-ray micro- and computed tomography, light-scattering technique, UV-visible spectroscopy, and others.
