Pasta is one of the products which belongs to the origin of traditional products, particularly from the European region. It has a good nutritional profile and a diverse range that evolved to products with high fiber, protein, and gluten-free, sincere efforts have seen the development of gluten-free pasta products. The marketing survey showed increasing demand for different pasta products and customers’ willingness to buy premium pasta products. This chapter covers the economic feasibility of setting up pasta products for small to medium-level enterprises, joint ventures, and start-ups. The cost analysis is based on net present value including land, equipment cost, raw material types needed in pasta manufacturing, plant layout and setup, and power cost. The project economics includes the operational cost of infrastructure, land, utility section, extruder, dryers, water purification, different packaging materials used for pasta products, and working capital required for human resource costs. Discussed the processing equipment, particularly blender and mixer types, and also discussed the processing from the raw material to finished goods.
