Aquatic Foodborne Zoonoses

For reasons such as significantly increasing human populations and medical research into the health benefits of seafood, global seafood consumption is increasing rapidly; however, seafood safety guidelines are lagging in many countries. The primary objective of this chapter is to provide information about some of the most prevalent seafood-borne parasites, including both well-recognised and frequently neglected species found in both freshwater and marine seafood products. When addressing foodborne parasitic diseases arising from aquatic animals, it is crucial to acknowledge that, unlike some other parasitic diseases, their prevalence is not necessarily limited to individuals with poor hygiene or from lower socio-economic backgrounds. They are common in developed countries as much as elsewhere, if not more. Given the impacts of global change, adopting a ‘One Health’ approach is paramount in ensuring safe seafood for all.
