Pumpkin seeds (Cucurbita spp.) have gained considerable attention for their possible health benefits, largely attributed to their rich nutrient composition and bioactive compounds. This chapter explores the antioxidant properties of pumpkin seeds, highlighting their role in combating oxidative stress and related diseases. Pumpkin seeds are abundant in phenolic compounds, vitamin E, carotenoids, and other antioxidants, which contribute to their ability to neutralize free radicals. The chapter discusses the implications of pumpkin seed consumption for human health, particularly in the stoppage and management of chronic conditions like cardiovascular diseases, diabetes, and cancer.
