The exponential increase in the number of Internet of Things (IoT)-based use cases such as intelligent transportation systems, healthcare, maritime industry, supply chain management, logistics, etc. spawns a large amount of data that needs to be critically analyzed and communicated to peer devices for deriving meaningful insights. However, the present traditional terrestrial system, driven by Wi-Fi access points and cellular base stations, provides limited capabilities in terms of resources, communication speed, and geographical coverage. In the same vein, Artificial Intelligence (AI) is emerging as an indispensable ingredient with the advent of crunching limitless data and proving business intelligence. Therefore, AI enabled Non-Terrestrial Networks (NTNs) powered by 6G capabilities are emerging, which are served by base stations floating in the air. AI-assisted NTN enablers such as low-orbit flying objects (UAVs or drones) and high orbit satellites play a crucial role in extending communication capabilities and coverage for improved data exchange. Hence, our work proposes a framework that brings forth the implications of AI-driven IoT (AIoT) use cases, powered by NTNs and 6G. Furthermore, we showcase popular essential use cases that aid in understanding the efficient re-engineering of NTNs to address remote IoT use cases. Finally, we emphasize the various open challenges that result from this technological amalgamation, such as threats to security, privacy, societal, and legal implications.
