The potato (Solanum tuberosum L.) is a globally vital staple food, and its quality is essential for meeting consumer and industry demands. Recent innovations in potato quality enhancement requires genetic, agronomic, and post-harvest technologies. Genetic improvements, including marker-assisted selection and genetic modification, have produced varieties with superior disease resistance, better nutritional profiles, and enhanced processing qualities. Notably, genetically engineered potatoes with reduced acrylamide levels—a potential carcinogen formed during high-temperature cooking—offer significant health benefits. Agronomic advancements, such as precision farming and optimized nutrient applications, have boosted tuber yield and quality. Remote sensing and data analytics enable precise monitoring of crop health, while advanced irrigation methods, like drip irrigation, enhance water use efficiency and ensure consistent moisture, further elevating tuber quality. Advancements in post-harvest technologies have significantly improved potato quality and shelf life. Enhanced storage methods, such as controlled atmosphere storage and advanced curing techniques, help maintain tuber quality and reduce spoilage. Low-temperature storage and modified atmosphere packaging preserve nutritional value, while innovations in sorting and grading technologies ensure high-quality tubers for consumption and processing. These improvements minimize waste and ensure product consistency. Continued research and technological development are crucial for addressing emerging challenges and further enhancing the quality and sustainability of potato production across the entire supply chain.
