Due to the high concentration of dietary proteins that may be found in legumes, they constitute an essential component of the world’s food supply. In addition to having a large amount of plant protein, legumes also have a high concentration of a wide variety of other nutrients as well as helpful phytochemical compounds. In order to improve the nutritional value of legumes and so contribute to the fight against malnutrition on a global scale, biofortification has been shown to be the most effective method currently available. Researchers and scientists are putting forth their best effort to make use of a wide variety of biofortifying strategies in order to accomplish their mission and compose a compelling narrative. As a result, the topic of food legume biofortification and how it may function as a nutritional powerhouse to avoid malnutrition will be the primary focus of this chapter, which will also include a critical discussion on the topic. In addition, this chapter looked at a number of different ways to biofortification, some of which are more current while others are more conventional. In addition, we investigated our current situation and the work that we have completed, as well as the challenges that lie ahead and opportunities that lie ahead for the biofortification of food legumes. Our goal is to meet the demands of the rapidly expanding global population for food and animal feed in this way.
