Circular Economy in the Hotels & Restaurant Sector: Literature Review and Further Research Agenda. The Case of Paradores

This paper delves into the circular economy within the hospitality industry, specifically hotels and restaurants, addressing critical gaps in existing literature. Focusing on the Spanish context, it centres on the case study of Paradores de Turismo de España, a leading Spanish hotel chain, to highlight its sustainable practices and emphasise the need for a unified circular framework. The company’s commitment to sustainability, seen in initiatives like eliminating single-use plastics and effective food waste management, provides valuable industry insights. Despite challenges posed by the unique nature of each Parador, lacking a standardised circular framework, the study advocates for a systemic industry-wide integration of circular principles.
