The constant growth of the world’s population and its impact on environmental and food security systems require the adoption of policies that promote industrial, economic, and environmental sustainability. The sustainable use of agro-industrial by-products is a way to reduce food waste and promote the circular economy, while protecting the environment from inappropriate disposal of these residues. Jaboticaba by-products, such as peels and seeds, are rich in bioactive compounds, such as polyphenols and dietary fibers, and have already been used in new foods, nutraceuticals, cosmetics, and other high-value products. This chapter presents data on jaboticaba production in Brazil, the economic aspects of using by-products, examples of industrial applications of jaboticaba by-products, and the environmental benefits of this practice.
