Sustainable development aligned with educational policies for teaching, research, and outreach is a strong driver of innovative projects and the creation of practical results based on community needs. The perspectives for sustainable development are particularly crucial as they require a careful analysis that is facilitated by discussion, monitoring, and reassessment. Within this scope, the interaction between Brazilian higher education institutions and communities, which is seen to promote the use of a scientific approach based on the implementation of practical solutions and techniques, provides a basis for a sustainable environment. The objective of this chapter is to describe, present, and highlight the results arising from the dialogue between the University of Southern Santa Catarina’s GREENS research group and the surrounding communities to enable feasible, viable, and consistent solutions. The methodology employed is based on action-research, encompassing the engagement with the problem and communities; proposing solutions as products and techniques; applying solutions in communities; and reanalyzing and validating the solutions implemented in communities. The study emphasizes the contribution of the GREENS research group to the cause of sustainable development and highlights the importance of the so-called teaching-research-outreach tripod in addressing the environmental and social demands of local communities. This is achieved through the action research method conducted by researchers from the Center for Sustainable Development—GREENS, affiliated with UNISUL.
