Measurement of Halal Performance in Frozen Food Supply Chain Management

The growing Muslim population in the world has raised the demand for halal products. Every firm that produces halal products must measure halal performance across the supply chain. The purpose of this research is to estimate the performance value of supply chain management by measuring halal criteria implementation in frozen food firms using the Supply Chain Operation Reference (SCOR) method. The five basic processes of the SCOR model (Plan, Source, Make, Deliver, and Return) are associated with 11 halal assurance system requirements to yield 56 performance indicators. To achieve performance values, the Analytical Hierarchy Process (AHP) approach is used to normalize and weight important performance indicators. The results indicated that the frozen food industry had a performance value of 68.08. According to the Traffic Light System method, 16 KPIs are in the red category (needs improvement), 10 KPIs are in the yellow category (this requires improvement), and 30 indicators are in the green category (i.e. on target). For example, it is advised to improve the indicators ‘Training procedures according to the halal assurance system (HAS)’ and ‘Audit procedures according to HAS 23000’, which are in the red category, by developing appropriate procedures.
