Analysis of the Implementation of Halal Supply Chain Management in the Biscuit Processing Industry (Case Study: UD Sofia Cookies)

The market demand for halal products worldwide continues to rise. Halal has become a significant aspect for Muslim consumers when purchasing food. Consumers not only desire products with halal claims but also ensure the cleanliness, safety, and quality of products at every stage of the production and supply chain. The halal supply chain starts from the procurement of raw materials, then transforming raw materials through the production process, producing finished products, and ultimately delivering the finished products to customers while maintaining their halal integrity. This research aims to understand how the analysis of the implementation of halal supply chain management in the biscuit processing industry at UD Sofia Cookies. The research approach is qualitative, using descriptive analysis. The research methodology involves observations, interviews, and document analysis to gather data about the Halal Supply Chain Management practices at UD Sofia Cookies. The implementation of Halal Supply Chain Management encompasses several elements, starting from human resources, inbound halal logistics services, product manufacturing, outbound halal logistics services, and customers. The results of this research indicate that UD Sofia Cookies has complied and implemented well in accordance with the Sharia rules, including the use of raw materials that are not prohibited, such as pork, dogs, blood, and khamr. All equipment and facilities used for production and distribution are ensured to be clean.
