Enhancing MSME Tofu Production Efficiency Through Waste Minimization: A Value Stream Mapping and FMEA Approach

An MSME tofu producer cannot maximize orders due to time constraints in the production process. In addition, the scarcity of raw materials and the large number of damaged tofu products are also obstacles that are often complained about. These constraints are a form of waste (waste) so that the production process cannot be optimal. This study aims to identify, minimize, and eliminate the possibility of waste that occurs by reducing activities that do not add value. The method used is Value Stream Mapping, then analyzed using VALSAT to be able to choose suitable repair tools. The results of the identification of waste are then further analyzed using FMEA to be able to determine the critical priority that causes the occurrence of waste. The results showed that the mapping on CVSM had a PCE value of 15.56%, while the FVSM mapping improvement had a PCE value of 22.56%. The results of waste identification using the waste workshop obtained the 5 highest waste priorities namely 18% defect, 16% overprocessing, 15% transportation, 15% inventory, and 14% waiting. The recommended improvements are making SOPs, quality control check sheets, switching to spinner machines, automating distribution using pipes, scheduling raw materials based on requests, and providing training and rewards to workers to increase work motivation.
