Essential oils and plant aromas represent real potential for the industry to replace synthetic compounds having harmful effects on health and the environment. This work focuses on the effect of different drying methods (in the open air, the oven, indirect solar dryer) on the extraction of essential oils from the tobacco plant (Nicotiana Tabacum L.) from the Timimoune region. We used steam distillation as a method to extract the essential oil from the Tobacco plant before flowering and maturation. Tobacco used during drying could be subjected to changes in their physicochemical properties such as color, water activity (Aw), total soluble solids (TSS), phenol content, antioxidant capacity, and moisture content (MC), and, thus, results were compared with fresh Nicotiana Tabacum L. samples. The extraction of essential oil from the plant gave a yield of 0.6% for indirect drying, a yield of 0.4% for oven drying and a yield of 0.3% for air drying free. They are slightly higher than that of the AFNOR standards (0.15%). The indirect solar dryer allows the preservation of secondary metabolites (essential oils) of all the extracts investigated compared to other drying methods.
