Frozen desserts are valued by consumers for their wide range of excellent quality flavors that can appeal to all tastes. Addition of flavors also provides manufacturers with an opportunity to differentiate their products and compete for market share. The important flavoring substances for frozen desserts are vanilla, chocolate and cocoa, confectionery and bakery inclusions, fruits and fruit extracts, nuts, spices, and liqueurs, although other flavors can be incorporated into frozen desserts quite easily, if there is a market for them. Many ice cream flavors are unique to particular global regions, although the choice of frozen dairy dessert flavors by consumers around the world is surprisingly similar. This chapter reviews the global distribution of flavors and regulations surrounding their use. It also reviews sources of these flavor components and the successful incorporation of them into frozen dairy desserts. Finally flavor defects associated with flavoring systems are discussed.
