The evaluation is the first essential moment in the care of patients with dysphagia (Logemann 1983). It can be carried out with clinical or instrumental methods, often both (McCullough and Martino 2013). It is important to formulate a diagnosis and identify the dysfunction that generates the swallowing disorder. In fact, the presence and nature of the swallowing problem are established through evaluation. In other words, an assessment is important not only for diagnostic purposes but also for stating and defining the rehabilitation program. The evaluation of dysphagia can be divided into three levels:
