Exploring the Fusion: Applications and Challenges of Integrating Food Technology with Big Data and Industry 5.0

Advent of Big Data has restructured some industries, with the food sector, by generating massive amounts of data from sources such as Internet of Things (IoT), social media and phones. This influx of data, whether structured or unstructured, has prompted the development and pursuit of Big Data technologies throughout the food supply chain. An outline of topical advances in Big data applications within food safety, highlighting its nascent stage while acknowledging its significant influence across the entire supply chain were explored in this chapter. It offers predictive insights, aids in real-time decision-making, shape monitoring and sampling strategies within the food supply chain. Furthermore, the integration of Big Data with AI/ML presents opportunities for personalized consumer understandings and enriched operating efficacy. Despite these advancements, challenges persist, necessitating further research efforts. From reducing post-harvest losses to optimizing supply chain management and enhancing food safety, Big Data holds immense potential for transforming the food industry. However, unlocking this potential requires addressing technological, health, and sustainability concerns. This paper synthesizes insights from various perspectives, including food safety, supply chain management, consumer behaviour, and regulatory compliance, to underscore the multifaceted influence of Big Data on the food industry and the pressing need for its continued exploration and implementation. In addition to these advancements, the emergence of Industry 5.0 announces an exemplar swing by assimilating human-centered approaches with ultra-modern technologies like Big Data and AI/ML. This evolutions intention to substitute connection among people and machines, emphasizing the importance of social creativity and ingenuity in driving innovation and problem-solving within the food industry and beyond.
