This chapter investigates the pivotal role of millets in expanding sustainability within the framework of Industry 5.0 and the United Nations’ Sustainable Development Goals (SDGs). Millets, often termed as “smart crops,” acquire exceptional characteristics that make them highly beneficial to sustainable agricultural practices. This study focuses on the environmental, economic, and nutritional values of millet cultivation and consumption, highlighting their association with key SDGs such as Zero Hunger, Climate Action, and Good Health and Well-being. Moreover, it investigates into the principles of Industry 5.0, highlighting the incorporation of traditional farming practices with innovative technologies to improve efficiency and sustainability in millet production. Through case studies and analysis, this chapter emphasizes the challenges and opportunities linked with mounting up millet farming and processing, stressing the need for collaborative works among stakeholders.
