Spectral imaging has transformed the food industry, offering a comprehensive solution for quality control, safety verification, and food analysis. This chapter delves into its diverse applications. HSI and MSI are powerful tools in identifying defects, tracking microbial activity, and verifying food authenticity. It predicts chemical properties, nutritional content, and sensory characteristics, enabling detailed evaluation of moisture, fat, protein, and the distribution of vitamins, minerals, and antioxidants. Spectral imaging is also outstanding in predictive modelling, monitoring microbial growth, pH, and temperature changes, and aiding in traceability and authentication. It contributes to texture analysis, flavour identification, and sensory assessment, offering insights into color, texture, freshness, and flavour profiles. With the aid of machine learning and chemometrics, spectral imaging boosts the precision and efficiency of food quality assessment, heralding progress in food safety, authenticity, and consumer satisfaction.
