Analysis of Vegetable Products

Consumers are becoming more concerned about the quality, safety, and authenticity of food products. This has increased interest in non-invasive sensing methods that can quickly analyze these goods. This chapter presents an overview of the state-of-the-art in food assurance techniques utilized for vegetable products. Using non-invasive sensing techniques, the primary food quality qualities of interest are sensory attributes, chemical composition, physicochemical properties, health-promoting attributes, nutritional attributes, and safety. Furthermore, these techniques do not require independent analysis to have simultaneous access to both quantitative and qualitative data. Numerous studies on the non-invasive detection measurements of agro-food products and the ultimate evaluation of food quality have been published recently. In addition, integrating non-invasive food characterization techniques with more accurate and efficient imaging methods, such as those using machine vision, can provide intriguing discoveries. The purpose of this chapter is to present the use of various non-invasive methods for assessing the safety and quality of vegetable products.
