Fluid Mechanics in Food & Dairy Processing
摘要
Fluid movement is integral to the operations of numerous food and dairy industries worldwide, where the utilization of viscous fluids in large-scale food production is common. However, maintaining the cleanliness and clarity of equipment, particularly pipes, is imperative for the seamless transportation of these viscous liquids. Within fluid mechanics, precise control over fluid dynamics is indispensable for achieving both efficiency and superior product quality. This entails optimizing various processes such as mixing, pumping, heat transfer, and separation. To this end, advanced modeling techniques, including computational fluid dynamics, have emerged as vital tools for the design and enhancement of processing equipment and systems within these industries. Computational fluid dynamics offers a robust method for modeling and simulating fluid-related processes, encompassing fluid flow, mass transfer, heat transfer, and chemical reactions. Given the intricate nature of food systems, careful consideration must be given to how modifications in structure and physicochemical reactions impact the final product’s quality, with thermodynamic principles guiding such assessments. Furthermore, discussions surrounding the rheology of fluids and solids are widespread, encompassing various concepts, classifications, models, and applications relevant to the design of equipment used in food, beverage, and dairy production.
