The Role of Diets in Oxidative Stress-Induced Diseases

Oxidative stress is characterized by an imbalance between antioxidant defense mechanisms and reactive oxygen species (ROS), which are a pivotal health concern worldwide. Research evidence suggests that dietary patterns play a critical role in mediating oxidative stress levels and thereby increase disease susceptibility. This chapter discussed the current studies on the role of diets in chronic diseases by highlighting various bioactive constituents and their mode of action. Antioxidant-rich foods, for instance, whole grains, nuts, vegetables and fruits, fish and meat, and legumes, are demonstrated to alleviate oxidative damage by improving endogenous antioxidant systems and scavenging free radicals. Collectively, a better understanding of the intricate interplay between oxidative stress and diets provides valuable insight into developing targeted nutritional interventions to manage and prevent oxidative stress-related diseases and subsequently enhance well-being and public health.
