Prebiotics, on the other hand, are non-digestible substances that stimulate the growth of beneficial gut microflora. Both probiotics and prebiotics have gained significant attention in food science, nutrition, and healthcare due to their potential health benefits. In recent years, the fields of food science, nutrition, and healthcare have seen a surge in interest in probiotics and prebiotics due to their potential to enhance health and prevent diseases. This chapter provides an in-depth examination of the definitions, historical background, and characteristic features of probiotics and prebiotics. It explores the various microorganisms commonly employed as probiotics, including lactic acid bacteria such as Lactobacillus and Bifidobacterium, and their unique.
