Soil Microorganisms and Mycotoxins

Soil microbiomes, consisting of a wide array of microorganisms, are vital for soil health and ecosystem functionality. These microbial communities are integral to nutrient cycling, organic matter breakdown, and supporting plant growth. However, they are also involved in both the production and degradation of mycotoxins—hazardous secondary metabolites generated by certain fungi. Mycotoxins, which are toxic secondary metabolites produced by fungi, pose a significant risk to food and feed safety. Biological methods, including the use of microorganisms for mycotoxin biodegradation, are promising due to their efficiency, cost-effectiveness, and simplicity compared to physical and chemical methods. Advances in metagenomics and bioinformatics have allowed for detailed analysis of soil microbial communities and their capabilities. Research has shown that some soil bacteria and fungi can break down mycotoxins, suggesting potential bioremediation methods. Environmental conditions, such as soil pH, moisture levels, and organic matter content, can affect both microbial community structures and mycotoxin levels. Combining soil microbiome management with sustainable agricultural practices can improve soil resilience and lower mycotoxin risks. Continued research is necessary to fully understand the complex interactions between soil microorganisms and mycotoxins, leading to innovative approaches in soil management and ensuring food safety.
