The purpose of this communication is to analyze the appropriate protection of Jamón Serrano (Serrano ham) among the various differentiated quality schemes. The issue—which is far from being peaceful—raises one of the most current debates in the Spanish meat industry. Specifically, the dilemma lies between maintaining the traditional specialty guaranteed-TSG- or opting for the protected geographical indication -PGI- as a means for the protection and promotion of Jamón Serrano. This work, after presenting the state of the matter, focuses its study, from a legal point of view, on the assessment of each of the arguments for and against the cancellation of the name Jamón Serrano-Jamón Serrano—as TSG and its registration as PGI.
