Challenges & Perspectives of Bio-based Additives of Food Industry
摘要
The food sector is experiencing a transformation toward more sustainable practices, which has increased interest in bio-based additives as alternatives to traditional chemical additions. Bio-based additives, generated from renewable resources such as plants, microbes, and sea animals, provide several benefits, including improved health and safety profiles, environmental sustainability, and the capacity to fulfil customer demand for clean-label items. However, the successful implementation of bio-based additives in the food industry faces several challenges. Technical constraints regarding formulation, stability, and compatibility with different food systems hinder their widespread adoption. Cost-effectiveness, supply chain issues, and other difficulties can cause major problems. This research chapter explores the challenges and perspectives of bio-based additives in the food industry, addressing technical, regulatory, and economic considerations. Case studies highlighting successful applications of bio-based additives for preservation, texture enhancement, flavor, and nutrition will be examined. Furthermore, innovative approaches, emerging technologies, and potential market expansions will be discussed. Understanding and overcoming these challenges will contribute to developing and adopting bio-based additives, fostering sustainable and healthier food production practices.
