The Environmental Aspect: Microbial Involvement in the Biodegradation of Bio-based Food Additives and Their Mechanisms

The need for natural, healthy food has increased since the consequences of synthetic food additives are being well known. Bio-based additives are derived from natural ingredients and are an alternative to synthetic food additives. It may reduce the impact of the food industry environment and save the earth from pollution. Food properties, such as texture, stability, viscosity, and consistency, can be enhanced by bio-based additives. Bio-based food additives are more biodegradable than synthetic food additives due to microbial decomposition, enzymatic reactions, metabolic pathways, and mineralization. The broken tiny molecules from biodegradation can be degraded into carbon dioxide, water, methane, and biomass. However, biodegradation occurs when it is used for a long time in food. Environmental conditions, chemical structure, and microbial diversity are the factors behind the biodegradation process in food additives; it has numerous environmental impacts and helps protect the ecology by regenerating natural resources and promoting sustainable food production. This chapter examines the workings of bio-based food additives. It emphasizes their substantial effects on human health, sustainability, mechanisms, biodegradation processes, and food safety.
