Advances in the Production of Low-Fat Meat Products

This chapter delves into the progressive techniques and materials employed in the production of low-fat meat products. It sheds light on six innovative fat replacers: microencapsulated healthier oils, microparticulated proteins, oleogels, emulsion gels, protein-based hydrogelled emulsions, and microparticulated powders and microgels. Microencapsulated healthier oils are investigated for their ability to enhance the stability and sensory properties of low-fat meat products, while reducing overall fat content. The potential of microparticulated proteins to simulate the texture of fat without significantly altering the taste of meat products is discussed. Oleogels are examined for their unique capacity to mimic the structural properties of solid fats, providing a healthier fatty acid profile. Emulsion gels are explored as an innovative fat replacement method, embedding tiny oil droplets in a water-based gel for application in meat products. Protein-based hydrogelled emulsions are reviewed for their tunable structure and ability to replicate the sensory characteristics of fatty meats. The chapter also discusses the versatile nature of microparticulated powders and microgels as fat replacers in a wide range of meat products.
