摘要

Fossil-based polymers have many beneficial qualities for food packaging like aesthetic design, chemical stability, lightness/clarity, processability, and versatility. However, these nonbiodegradable materials have an extremely adverse impact on the environment, being one of the significant reasons which leads to the environmental crisis. The shift towards greener, renewable-based food packaging is essential. This chapter provides an overview of the recent status of polysaccharides/proteins (starch, alginates, cellulose, chitosan, kefiran, pectin, pullulan, caseins, collagen, gelatin, keratin, whey, gluten, soy, and zein) as natural-sourced matrices for sustainable food packaging applications, in order to reduce the use of carbon fossil-based packaging.
