Given global challenges such as climate change, limited natural resources, and food insecurities, preventing food waste has become an important issue. As fighting food waste has been put on international and national agendas, we reflect here upon the concept of leftovers through an experimental and contemporary method called “surplus table.” Using the leftovers and surplus food is not only an economic but also a social and environmental gain as shown by an empirical test described here.
