Nutrition in Low Resource Countries

This chapter is an introduction to nutrition in low resource countries (LRCs). The chapter explores the definition, causes and consequences of malnutrition in addition to the underlying factors contributing to malnutrition. Population groups that are most at risk of malnutrition and an explanation of ‘hidden hunger’ or micronutrient deficiencies are also described. The chapter explores the prevention, management and use of multi-system approaches to combat malnutrition. Finally, ethical matters for food aid and considerations for the improvement of resilience of food supplies are explored.
