Citric acid (CA/H3Cit) is an organic compound of carbon, hydrogen, and oxygen atoms with HOCCOH as the general formula. It is a strong acidic ternary organic carboxylic acid, and because of the carboxyl contained in its molecular structure, it has a high affinity with oxidized minerals and can be adsorbed on their surfaces. It is a colorless and weak organic acid, and its derivatives have a low molecular weight, which can naturally occur in citric fruits, produced by actions of microbial fermentation and biodegradable organic products.
