Minimal Processing of Fruits and Vegetables

The history of “fresh-cut” or “minimally processed fresh produce” started during the 1940s when the first “fresh processed products were released in the market. In the beginning, simple and self-designed machines were used in processing fruits and vegetables, and the real innovation started with the changes during the 1980s coinciding with eating habits where consumers have been adopting the habit to eat out, and consequently the development of catering and fast-food services (Garrett, 2002).
