Sustainable Encapsulation Materials Derived from Seaweed

Polysaccharides derived from seaweed have excellent film-forming properties, therefore, they are used in the encapsulation of active ingredients as components in the preparation of films, as well as micro- and nano-capsules. Polysaccharides extracted from seaweed can protect the active ingredients from external factors, ensuring their stability and controlled release. This chapter is focused on the use of seaweed-derived polysaccharides as coating materials for active ingredients, while various encapsulation methods and applications of such materials are summarised.
