Processing and Preservation of Copra and Coconut Oil

Coconut (Cocos nucifera L.) is a monocotyledon tree often referred to as the ‘tree of heaven’ or ‘Kalpavriksha’ due to its versatile usability, with every part of the coconut tree serving various purposes and being considered auspicious. Coconut and its derivatives offer numerous health benefits, including weight management, cholesterol control, prevention of cardiovascular diseases, and enhancement of cognitive functions. This chapter explores innovative processing protocols involved in converting coconut to copra and the mechanisms that ultimately enhance the efficiency of coconut oil extraction. Given the susceptibility of copra and coconut oil to microbial attacks and rancidity, this chapter advocates for novel preservation techniques. Additionally, it discusses the utilization of by products generated during the processing of fresh coconut into coconut oil, aiming to establish a system of zero waste management that is both economically and environmentally friendly for coconut producers and processors.
