Coconut Kernel and Coconut Milk Preservation-Recent Technologies and Prospects

Coconut is a tropical palm tree that has a wide range of food applications, either directly or through value-added products. It is commonly grown in tropical and subtropical regions, so transportation is essential to ensure its availability throughout the world. The bulky nature of nuts due to the husk and shell severely restricts their easy conveyance. As a result, minimal processing of edible kernels is indispensable prior to its export. The coconut kernel is highly susceptible to spoilage due to the action of microbials and the presence of oil. Coconut milk is another popular food product made from coconut. Due to its lower emulsion stability, coconut milk, like coconut kernels, has a limited shelf life. Therefore, coconut kernels and coconut milk warrant appropriate preservation protocols. This chapter explores the methods for the preservation of coconut kernel and milk. Furthermore, the limitations of extant methods as well as their prospects are thoroughly discussed.
