Virgin coconut oil (VCO), famous for its health benefits and diverse applications, is experiencing a surge in market demand. However, this growth presents a significant challenge: adulteration with cheaper oils. This chapter explores the unique properties of VCO, its growing market, and the crucial methods used to combat adulteration. Extracted by natural methods, VCO retains the inherent goodness of fresh coconut meat, distinguishing it from refined coconut oil (RCO). Its unique health benefits and versatility in the culinary and cosmetic realms have propelled the VCO market to new heights. However, this growth breeds a concerning practice: the economic incentive to adulterate VCO with cheaper oils, primarily palm kernel oil. This deception not only undermines the expected health benefits, but also poses ethical concerns about consumer trust and transparency. To safeguard the VCO’s authenticity, various methods are employed. Regulatory bodies establish quality standards, while chemical analysis and gas chromatography identify deviations. Additionally, advanced spectroscopic techniques investigate deeper into the molecular structure of the oil to expose adulteration attempts. Ensuring VCO authenticity is crucial for consumer trust and requires the continuous development of reliable detection methods.
