The global food industry is undergoing a paradigm shift towards exploring lesser-known ingredients to meet the increasing demand for nutritious food options. This chapter sheds light on the versatility and nutritional significance of foxtail millet, highlighting its rich array of essential nutrients. Positioned as a viable solution to address food and nutrition insecurity, foxtail millet stands out for its ability to thrive in arid and resource-scarce environments, while yielding health-enhancing food products. Despite its traditional use as animal feed in affluent societies, the untapped potential of foxtail millet remains substantial. Processing techniques such as drying, roasting, germination, and fermentation offer avenues to unlock the nutritional potential of whole grains, surpassing the nutritional value of refined grains. Moreover, processed whole grain flours present a myriad of culinary possibilities, ranging from breads to cookies and porridge. While existing literature provides a foundational understanding of foxtail millet, further research and development efforts are indispensable. This necessitates the refinement of processing techniques to enhance efficiency and sustainability, establishing clear correlations between processing parameters and product quality, and comprehensively elucidating the health benefits associated with foxtail millet consumption. Ultimately, unlocking the full potential of foxtail millet holds promise for addressing global food security challenges and promoting human health and well-being.
