Biotechnologically extracted enzymes or protein isolates from plant sources are often obtained via cell disruption (Bekard et al. in Biopolymers 95:733–745, 2011;Dong et al. in Innov Food Sci Emerg Technol 12:478–483, 2011;Donsì et al. in Chem Eng Sci 64:520–532, 2009;Follows et al. in Biotechnol Bioeng 13:549–560, 1971;Geciova et al. in Int Dairy J 12:541–553, 2002;Hayes and Kelly in J Dairy Res 70:307–313, 2003;). High-pressure homogenizers (HPH), among others, are technically used for this purpose.
