Implications of Mycotoxins in Food Safety and Regulations

摘要

Certain fungi can produce mycotoxins, which are toxic substances that can contaminate various agricultural products such as crops, nuts, spices, and processed foods. These toxins pose a significant threat to food safety as they can have harmful effects on human and animal health. Consequently, regulations and guidelines have been established to control mycotoxin contamination and ensure food safety. Mycotoxins can cause acute and chronic health effects, including carcinogenic, mutagenic, neurotoxic, hepatotoxic, and immunotoxic effects. The specific health impacts depend on the type of mycotoxin and the level of exposure. Some well-known mycotoxins include aflatoxins, ochratoxin A, fumonisins, and deoxynivalenol (DON), among others. Numerous regulatory agencies around the world are responsible for setting and enforcing mycotoxin regulations to protect public health. These agencies include the U.S. Food and Drug Administration (FDA), the European Food Safety Authority (EFSA), the Codex Alimentarius Commission (Codex), and others at national and international levels. Regulatory bodies establish maximum limits, also known as maximum tolerable levels or regulatory limits, for mycotoxins in food and feed. These limits specify the maximum permissible levels of mycotoxins in various commodities. They are based on scientific risk assessments and aim to protect consumers’ health. The objective of this book chapter is to discuss the implications of mycotoxins for food safety and regulations.
