摘要

Pathogenic bacteria employ various methods to induce illness in their human hosts. They produce numerous chemicals that bind to specific targets on host cells, compromising the host’s responses and immunological activities. Communication mechanisms utilized by bacteria to interact with their hosts may be unique to particular diseases or shared across several species. The discovery and characterization of these strategies are crucial for effectively combating bacterial infections. This chapter explores published documents on the pathogenicity mechanisms of bacteria, highlighting significant aspects that contribute to the evaluation and characterization of this issue, thereby supporting efforts to find solutions. Several foodborne pathogenic bacteria are selected as models, and their resistance mechanisms are also discussed.
